Location
The Daftmill Distillery is located near Cupar in Fife. It's a family farm which in the 'quiet' months - mid-summer and mid-winter - produces whisky.
History
A family farm for six generations, brothers Francis and Ian Cuthbert grow cereals, potatoes, carrots and broccoli as well as rearing beef cattle. They built a small distillery in a disused oat mill on the farm with the first spirit flowing in December 2005.
Production
Distilling operates on a seasonal basis around the farming calendar. Barley grown on the farm is mashed using water from their own artesian well, the draff by product is fed to the cattle. A 2,500 litre wash still and 1,500 litre spirit still from Forsyths are used to produce a light fruity Lowland spirit. This is filled into ex-Heaven Hill casks at 63.5% ABV and matured on-site, they fill around 100 casks each year.

Review:
On this review I'm trying the 2006 Winter Release a 46% 12yo matured in 6 first fill Bourbon barrels. Cask 080/2006, 081/2006, 082/2006, 083/2006, 084/2006, 085/2006 which were filled on the 16th December 2006.
Distillery tasting notes:
My thoughts:
Appearance: Pale gold, almost white wine colour in the glass, swirls cling as a thin line, beading up and falling as slow thin legs.
Nose: Cold porridge smothered in honey. There's a little dried pineapple and vanilla. I little time in glass offers sugared popcorn and a little orchard fruit and a bready note.
Palate: Smooth creamy arrival with orchard and tropical fruit mixing nicely - pears and peaches offereing some dryness and pineaaple some sweetness. There's a lovely citrus note and a oak spice which leaves a slight drying note in the mouth as the liquid disappears.
Finish: Lingering orchard fruit, a little citrus and a gentle spice - nice!

Distillery tasting notes:
Daftmill’s Winter Batch Release opens with comforting aromas of stewed rhubarb and custard on the nose, with delicate notes of freshly baked bread, grains and dried coconut. With a little time in the glass, waves of fresh apple and pear emerge, mingling with vanilla spice. The palate offers notes of stewed fruits and Victoria sponge, with a more complex edge developing – with lemon zest and a slight grassy character. The texture is remarkably soft and creamy, integrating nicely with flavours of sponge pudding and custard. A long finish shows bags of wood spice; cinnamon, nutmeg and clove, with lingering fresh fruit and vanilla.
