Newer Distilleries 8 : Spirit of Yorkshire

This is the eighth in an occasional series about newer distilleries, this entry is about the Spirit Of Yorkshire Distillery.


Location

The Spirit Of Yorkshire Distillery is located in Humanby near Filey in East Yorkshire.


History

In 2016 farmer and brewer Tom Mellor from Wold Top Brewery and his business partner David Thompson collaborated to create a sustainable whisky distillery.




Spirit of Yorkshire are a field to bottle distillery, all of their barley is grown on their 600 acre farm high in the Yorkshire Wolds which has been in the family for generations . The barley is malted in nearby Bridlington and has been used in their brewery to brew award winning Wold Top's Beers since 2003. But since 2016 some of the wash has been used, just down the road, in their new distillery to make whisky.




Production

As you can see in their production process diagram, from their website, below they have two  Forsyth pot stills and an experimental four plate column still, this gives what they call a 'variance' to their spirit!



Whisky

Young whisky has been released in limited numbers as
Distillery Projects in 50cl bottles (001-004 looked at cask marrying, 005 & 006 were single casks).

Filey Bay their first standard whisky was released in October 2016 at 46% ABV, review to follow!

Opening Hours and Tour Times:
Monday-Saturday: 9.30am - 5pm and Sunday: 10am - 3pm.
Tours run each day at 11am, 1pm and also Monday to Saturday at 3pm  - always a good idea to book in advance!
