Bimber Santa's Edition 2025

Bimber have released a number of special edition bottles over the year and have rounded it off with Santa's Edition 2025



They sent me a sample, here's my thoughts!

Every year we try to make Christmas feel a bit more special, and this year we’re excited to share our Santa Edition 2025. It’s a festive single cask whisky that has been further matured in a Pedro Ximénez Sherry Cask. This special single malt has been bottled just for this Christmas season, bringing together rich and festive flavours. 

Santa’s Edition 2025, PX Sherry, 57.3% abv



My thoughts:

Appearance: dark gold in the glass, swirls cling as a thin line in the Glencairn, take a little while to bead up and eventually fall as slow thin legs.

Nose: dunnage funk, forest floor, berries and cherries and a lovely plum note. It's a little closed, the high ABV maybe suggested a little dilution is required? A little hint of smoke or cask char?

Palate: thick sweet arrival, a little chewy even? Chocolate covered toffee chewing nuts to start, a bite of ginger spice, some dates stuffed with chocolate nibs and a lovely liquorice note. Bonfire toffee apples again hint at smoke. Ginger spice and lemon zest left on the tongue as the liquid disappears.

Finish: lingering toffee, chocolate stuffed dates and a hint of ginger spice.

Thoughts: As Bimber's whisky continues to mature there are more and more great releases - this one would be perfect in anyone's Christmas stocking, it's available now!
