With his first @TweetTastingsof 2021 @TheWhiskyWire has teamed up with new English distillery @SpiritYorkshire to try some of their whiskies.
Yorkshire's first ever single malt whisky distillery can be found in the village Hunmanby, near Filey Bay on the Yorkshire Coast. The Spirit Of Yorkshire distillery was built in 2016 promoting itself as a Field to Bottle distillery, supported by the late Dr. Jim Swan
Using barley grown on their own 600 acre farm high in the Yorkshire Wolds (which has been in the family for generations) malted in nearby Bridlington and mashed in their brewery, the wash is transported down the road to be distilled in their new distillery to make whisky. They have the two largest stills in England
We were each sent a set of 3 samples:
- the new Flagship - 4yo Ex-bourbon
- their third release and first finished whisky - 4yo Moscatel (sherry) finish
- their fourth release - STR (shaved, toasted, re-charred) wine barriques finish (a favourite of Jim Swan)

My thoughts:
Appearance: pale gold in the glass, swirls cling as a thin line, bead up slowly and fall as slow thin legs.
Nose: young and spirity but full of lemon peel, vanilla and a hint of honey. Orchard fruit notes of peaches and pear with a little hint of toffee.
Palate: light creamy arrival, the orchard fruit and citrus from the nose come through here, lots of vanilla again and a big bite of peppery spice. Peach and lemon bonbon notes give a dryness.
Finish: medium length sweet honey with a dry edge and vanilla notes.

Nose: again a little spirity but fruity notes lead the way - strawberries, pears, peaches. No citrus this time but notes of dried fruit and toffee, maybe a hint of chocolate?
Palate: another creamy arrival, slightly oily, sweet with a bite of pepper. The fruit from the nose comes through - strawberries, peaches, pears and tangerine notes. Dried fruit and some earthy herbal notes.
Finish: medium length sweet honey with a spicy peeper edge and vanilla notes.

Nose: the youthful spirity notes are gone replaced by a more complex berry, toffee and citrus notes. Strawberries, blackberries and raspberries alongside buttered toffee popcorn and lemon peel.
Palate: a little thicker mouthfeel, full of fruit, caramel and vanilla notes. The berries from the nose are here, a little orchard fruit - maybe mixed fruit jam? There's also a lovely sweet spicy kick - crystallised ginger covered in icing sugar.
Finish: long sweet berry fruit notes with a ginger spice and vanilla.
