Irish Cask Strength

So what do you do when a mate from Ireland says "The distillery aren't sure whether to release a cask strength version of the 12yo, I've suggested a tasting, do you want to take part?"


Well as you can imagine it took me a couple of milliseconds to reply, a few days later 25 of us received a lovely packaged bottle in the post.

Omar @thatsdramgood was talking about the @Echlinville distillery in Northern Ireland and their @DunvilleWhiskey 12yo PX finished dram which by coincidence I'd tried for the first time a few weeks earlier - you can read my review here.


Although Echlinville is a field to glass distillery, they didn't start distilling until 2013 so this would be bought in stock, probably from Cooley - but they won't tell us, matured on site since 2013.

The 12yo PX has been matured for ten years in ex-bourbon casks before being finished for two years PX Sherry casks. Then it's normally diluted to 46% for bottling, but in this case we were trying the cask strength version which came in at 57% ABV.

How can it be distilled there when they didn’t start distilled until 2013?
